Gizzards are actually very good; they're normally used in making a soup, but then you can eat them. Some "home-style" restaurants even offer fried gizzards on the menu.
The necks & backs are used in soup making, too. The necks aren't much good for using as food, because they're basically a million little bones and you can't give them to dogs. I'm not sure about the backs, I think those are probably too boney for eating, too.
But don't hesitate to give the cooked gizzards to your dog! They have a very rubbery consistency when cooked, so I don't know how they'd be in any recipes. You can just give them the same as you would any cooked meat.

During Thanksgiving and Christmas my husband boils all the insides until they are thouroughly cooked. I use the meat on the neck for my gravy but he takes the heart and "gizzards" and shreds them up and tosses them to the dog and the cats plain without anything. We usually blink and they are all gone.If I find a recipe for any of it I will pass it on. However I am from the south and 99% of the time the gizzards are usually fried when eaten by people BLEH I wouldnt suggest fried for the doodles LOL.
